Baked Veggie Pasta

Rotini baked with broccoli, peppers, and a creamy tomato-cheese sauce.

Baked veggie pasta

This casserole-style pasta is rich, cheesy, and easy to prep ahead.

Ingredients

  • 8 oz rotini
  • 1 1/2 cups broccoli florets
  • 1/2 cup diced bell pepper
  • 1 cup marinara sauce
  • 1/2 cup cream or milk
  • 1 1/2 cups shredded mozzarella
  • 1/4 cup grated parmesan
  • 1 tsp Italian seasoning
  • Salt and pepper

Steps

  1. Heat oven to 375F. Grease a baking dish.
  2. Cook rotini until just tender. Steam broccoli for 2 minutes.
  3. Toss pasta, broccoli, peppers, marinara, cream, seasoning, and half the cheese.
  4. Spread into the dish and top with remaining cheese.
  5. Bake 20 to 25 minutes until bubbly and golden.

Notes

  • Add sauteed mushrooms for extra depth.
  • Rest 5 minutes before serving for cleaner slices.
