Banana cream bars

These bars are soft and snackable, with a cream cheese frosting that balances the banana sweetness.

Ingredients

  • 1/2 cup unsalted butter, room temp
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup mashed ripe banana
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp fine salt

Frosting

  • 6 oz cream cheese, room temp
  • 1/4 cup unsalted butter, room temp
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 banana, sliced for topping

Steps

  1. Heat oven to 350F. Line a 9x9-inch pan with parchment.
  2. Beat butter and sugars until fluffy. Add eggs, banana, and vanilla.
  3. Fold in flour, baking powder, and salt.
  4. Spread batter evenly. Bake 22 to 26 minutes until set.
  5. Beat frosting ingredients until smooth. Chill 10 minutes if soft.
  6. Frost cooled bars, top with banana slices, and chill before slicing.

Notes

  • Add a squeeze of lemon to the banana slices to slow browning.
  • Store chilled and eat within 2 days for the best texture.
