Creamy vegetable soup

This soup is cozy and light, perfect for dipping breadsticks.

Ingredients

  • 1 tbsp butter
  • 1 tbsp oil
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 1 cup cauliflower florets
  • 1/2 cup peas
  • 3 cups vegetable stock
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/4 cup cream
  • Breadsticks to serve

Steps

  1. Heat butter and oil. Saute onion and carrot for 3 minutes.
  2. Add cauliflower, peas, stock, salt, and pepper. Simmer 15 minutes.
  3. Blend until smooth, return to the pot, and stir in cream.
  4. Simmer 2 minutes and serve with breadsticks.

Notes

  • Use milk instead of cream for a lighter soup.
  • Add herbs like parsley or thyme for extra flavor.
