Fluffy Pancakes

Fluffy pancakes

These pancakes are light and tender with a golden finish. Keep the heat medium so the centers cook through.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp fine salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Steps

  1. Whisk flour, sugar, baking powder, and salt.
  2. Whisk milk, egg, butter, and vanilla, then combine with dry ingredients.
  3. Rest batter 5 minutes.
  4. Cook on a lightly greased skillet over medium heat, 2 minutes per side.

Notes

  • Do not overmix or the pancakes will be tough.
  • Add blueberries or chocolate chips just before flipping.
