Funfetti Shortbread Bars

Funfetti shortbread bars

These bars are crisp on the edges and tender in the center. Keep the dough cool for clean slices.

Ingredients

  • 1 cup unsalted butter, room temp
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp fine salt
  • 2 tbsp rainbow sprinkles

Steps

  1. Heat oven to 350F. Line an 8-inch pan with parchment.
  2. Beat butter and sugar until fluffy, then add vanilla.
  3. Mix in flour and salt. Fold in sprinkles.
  4. Press dough evenly into the pan and score into 16 bars.
  5. Bake 25 to 30 minutes until lightly golden.
  6. Cool completely, then cut along the score lines.

Notes

  • Chill the pan 10 minutes before baking if the dough is soft.
  • Use jimmies sprinkles so the color does not bleed.
