Mini apple pie

This mini pie is perfect for a small gathering. The lattice keeps the filling glossy and golden.

Ingredients

Crust

  • 1 1/4 cups all-purpose flour
  • 1 tbsp sugar
  • 1/2 tsp fine salt
  • 1/2 cup cold butter, cubed
  • 3 to 4 tbsp ice water

Filling

  • 2 cups peeled, diced apples
  • 2 tbsp sugar
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Steps

  1. Mix flour, sugar, and salt. Cut in butter to pea-sized crumbs.
  2. Add ice water until the dough just comes together. Chill 30 minutes.
  3. Toss apples with sugars, cinnamon, cornstarch, and lemon juice.
  4. Roll dough, line a 6-inch pan, fill, and add lattice strips.
  5. Bake at 375F for 30 to 35 minutes until golden.

Notes

  • Chill the crust before baking for clean edges.
  • Swap apples for pear for a softer filling.
