Mint vanilla cupcakes

These cupcakes have a light mint tint and a smooth vanilla frosting.

Ingredients

Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp fine salt
  • 1/2 cup unsalted butter, room temp
  • 3/4 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/4 tsp mint extract
  • Green food color

Frosting

  • 1 cup unsalted butter, room temp
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 to 3 tbsp milk
  • Pinch of salt

Steps

  1. Heat oven to 350F. Line a muffin pan.
  2. Cream butter and sugar. Beat in eggs, vanilla, and mint.
  3. Add flour, baking powder, salt, and milk in alternating additions.
  4. Tint with a drop of green food color.
  5. Bake 16 to 18 minutes. Cool completely.
  6. Beat frosting ingredients until smooth and pipe on cupcakes.

Notes

  • Add mint extract sparingly so it stays subtle.
  • Chill frosting 10 minutes if it feels soft.
