These cupcakes have a light mint tint and a smooth vanilla frosting.
Ingredients
Cupcakes
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp fine salt
- 1/2 cup unsalted butter, room temp
- 3/4 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/4 tsp mint extract
- Green food color
Frosting
- 1 cup unsalted butter, room temp
- 3 1/2 cups powdered sugar
- 1 tsp vanilla extract
- 2 to 3 tbsp milk
- Pinch of salt
Steps
- Heat oven to 350F. Line a muffin pan.
- Cream butter and sugar. Beat in eggs, vanilla, and mint.
- Add flour, baking powder, salt, and milk in alternating additions.
- Tint with a drop of green food color.
- Bake 16 to 18 minutes. Cool completely.
- Beat frosting ingredients until smooth and pipe on cupcakes.
Notes
- Add mint extract sparingly so it stays subtle.
- Chill frosting 10 minutes if it feels soft.
