Ingredients
Cupcakes
- 1 1/4 cups all-purpose flour
- 1 tbsp cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp fine salt
- 1/2 cup sugar
- 1/2 cup oil
- 1 large egg
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- Red food color
Frosting
- 6 oz cream cheese, room temp
- 1/4 cup unsalted butter, room temp
- 1 1/2 cups powdered sugar
- 1 tsp vanilla extract
Steps
- Heat oven to 350F. Line a muffin pan.
- Whisk dry cupcake ingredients. Add sugar, oil, egg, buttermilk, vanilla, and red color.
- Fill liners 2/3 full. Bake 16 to 18 minutes.
- Beat frosting ingredients until smooth and pipe on cooled cupcakes.
Notes
- Do not overbake; keep the centers soft.
- Chill frosting 10 minutes if it is too soft to pipe.
