Tricolor Cheese Rotini

Quick rotini tossed with butter, a little garlic, and melty cheese.

Tricolor cheese rotini

A simple, cozy pasta bowl with just enough cheese to cling to every spiral.

Ingredients

  • 6 oz tricolor rotini
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1/2 cup shredded cheese
  • 2 tbsp reserved pasta water
  • Salt and pepper
  • Chopped herbs, optional

Steps

  1. Cook rotini in salted water until al dente. Reserve 2 tbsp water.
  2. Melt butter in a pan, add garlic, and cook 30 seconds.
  3. Toss in rotini, cheese, and reserved water. Stir until glossy.
  4. Season with salt and pepper and serve warm.

Notes

  • Add a pinch of chili flakes for heat.
  • Swap in parmesan for a saltier finish.
