Vanilla Sponge Cake

A light, even crumb sponge that works for layers or a simple tea cake.

Vanilla sponge cake

This sponge is fluffy without being dry. Serve it as is or brush with syrup before frosting.

Ingredients

  • 4 large eggs, room temp
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp fine salt
  • 2 tbsp melted butter
  • 2 tbsp milk

Steps

  1. Heat oven to 350F. Grease and line an 8-inch pan.
  2. Beat eggs and sugar until pale and thick, about 6 minutes. Mix in vanilla.
  3. Sift flour, baking powder, and salt over the batter and fold gently.
  4. Fold in melted butter and milk.
  5. Bake 25 to 30 minutes until springy in the center.
  6. Cool 10 minutes in the pan, then turn out and cool completely.

Notes

  • Fold slowly to keep the batter airy.
  • Brush with simple syrup for extra moisture.
