This sponge is fluffy without being dry. Serve it as is or brush with syrup before frosting.
Ingredients
- 4 large eggs, room temp
- 3/4 cup sugar
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp fine salt
- 2 tbsp melted butter
- 2 tbsp milk
Steps
- Heat oven to 350F. Grease and line an 8-inch pan.
- Beat eggs and sugar until pale and thick, about 6 minutes. Mix in vanilla.
- Sift flour, baking powder, and salt over the batter and fold gently.
- Fold in melted butter and milk.
- Bake 25 to 30 minutes until springy in the center.
- Cool 10 minutes in the pan, then turn out and cool completely.
Notes
- Fold slowly to keep the batter airy.
- Brush with simple syrup for extra moisture.
